I was reading Eat At Home’s Ingredient Spotlight Post on Pumpkin. I got quite a few recipes off of their blog and other blogs on the linkup page.
I saw a recipe on the linkup that was similar. I really don’t feel confident making brownies from scratch yet, so I had a box on hand and decided to improvise. This is what I came up with.
Pumpkin Swirl Brownies
1 box mix of Brownies (any kind can work)
1 can of pumpkin puree’
1 8oz package of cream cheese, softened (I used reduced fat, not that it helped much)
2 cups of powdered sugar
1 tsp vanilla
1 tbsp pumpkin pie spice
Preheat oven to appropriate time on box mix. Grease a 13x9 pan.
Mix Brownie mix as directed, and pour into a separate bowl.
Mix cream cheese, sugar and vanilla to a cream & fluffy texture. Add pumpkin puree.
Pour half of the Brownie mix into the bottom of pan. Then add pumpkin mixture on top. Add the rest of the Brownie mix. Top the pan with the other pumpkin mix. Swirl the mixes slightly with a spatula or spoon to make it look swirly!!!
Cook at desired time of Brownie mix and add 15-20 minutes extra.
Serve warm with a glass of ice cold milk!
I’m lucky that I had a chance to blog tonight. I’ve had a massive headache for the past 2 days. It’s a dulling headache and then randomly pain comes. Not quite sure what’s going on in my skull, but whatever it is, it’s telling me to go to bed early tonight. I’ll be back tomorrow! I’m a blogging fool!
