what i like to do on monday nights....

i'm pulling an all-nighter
because hubs-to-be is on a night shift job
and will be home at 7am
so we will eat breakfast
and crash in bed afterwards

then we will wake up before 2pm
I'll make dinner
pack him a lunch
and do it all over again

i'll become a night owl for three days
and then somehow
jump back in to a normal schedule
for a weekend out of town
don't ask me how,
but it must be done

because if i want to see my fiancee this week
i'll work with HIS schedule
and throw out mine
because I love him
and I want to
and i'm extremely crazy
and i'm hard-headed

but on to what i LOVE to do on monday nights...
screaming for a cat that I haven't seen in 24 hours
i thought she was in the garage
but she was in
the ATTIC

she climbed through a hole
in the ceiling of our garage
and couldn't get out
because apparently she didn't know how to get down

so i tried getting her out
and she darn near scratched my eyes out
while i was sniffing in dead junebugs and spiders
as well as an inch thick of dust
all on top of an awkward shelf in our garage
which i somehow wiggled my large dereierre onto it

thanks DirecTv guy for stepping off the attic path
and stepping in to our garage ceiling
that we didn't think we needed to worry about
until tonight

ok, words are getting blurry now
take a look at the pics, and excuse my sarcasm

the awkward hole in our garage ceiling

the even more awkward cat
that climbed in the awkward hole in our garage ceiling
and stayed in the attic for 24 hours

because apparently she thought she couldn't get down

{please excuse my disgusting garage...
can't wait for warmer weather to stay so we can clean this thing out}

I coerced her from the attic by violently shaking her food
and talking baby talk to her
she finally had the guts to get down
and then she ate almost an entire bowl of food

THANKSGIVING...and a recipe ♥

HAPPY THANKSGIVING!
(cute lil poem for the day, hehe)

I am so thankful for our Lord! He has blessed me with everything else I am thankful for. I am so thankful for my family, especially Brian, my parents, and my brother. They have smothered me with love for so many years, and they are my world.

Today we had a wonderful feast for our family. It was just the four of us, my mom and dad, my brother, and myself. Brian is in Pecos, TX, on a job. He is on call for Thanksgiving, but off for Christmas Day, so this is why he is gone for the holiday. Everytime I thought of him, it made me very sad. I tried all day not to thik about missing him, but knowing that next year he will be able to spend Thanksgiving with us again. We already made him a plate and froze it for when he gets home next week. Here is a look at what we enjoyed.

our feast consisted of: Oven Roasted Turkey, Mashed Potatoes, Gravy, Walnut Stuffing, Mashed Ruttabagas, Rhodes Rolls, Sweet Potatoes, Egg Nog, Milk and Iced Tea!!!

our scrumptious turkey

the dogs were jealous...haha

I snapped a pic of this Texas Yellow Rose in my mom's garden. It's now 36 degrees outside, so I knew it would be gone tomorrow!

and of course...the legendary chocolate pie I enjoyed hours after dinner, and couldn't finish...

mom also made (along with the chocolate pie): chocolate chip cookies, sweet potatoe pie, coconut cream pie, banana pudding, and brownies....all for dessert...all for 4 people...

You may be thinking to yourself...well that doesn't look too appetizing...oh but it is...its so decadent, silky, buttery, sweet and CHOCOLATEY!!!

would you like the recipe? of course you would...

Val's Legendary Chocolate Pie

Ingredients
2 sticks butter COLD
1 Cup of sugar
3 eggs
1tbsp vanilla
4 blocks of Baker’s UNSWEETENED chocolate (8 blocks come in one box of this chocolate) I can always find this at Walmart or HEB
1 frozen pie shell cooked and cooled OR homemade pie shell cooked and cooled
Directions
Whip cold butter and sugar until white and fluffy. This usually takes 5-10 minutes with my Kitchen Aid.
Meanwhile, in the microwave heat 4 blocks of the chocolate in a microwave safe bowl for 1 minute or until it is partially melted. Mix with a spoon to melt completely. Set aside
Add eggs and vanilla and whip until the sugar dissolves completely. You do not want a GRITTY pie.
Add the chocolate to the pie mixture slowly, making sure it mixes completely.

Fill the pie shell with the chocolate mixture.

Refrigerate to set. Serves 8-10 pieces of pie. Keep refrigerated at all times.

You can serve it topped with whipped cream, homeade is the best.

♥ So, Baby, Hold on Tight ♥

Again, its been a while since I've written.

I just got off of the phone with Brian...he's in West Virginia. My cat decided to slip outside and climb up a tree. What an idgett...she drives me nuts. Ugh...

We got a new puppy, Tori, actually Citori! After the Browning Citori over and under gun that Brian loves. I'll post pics once I get the chance. You can always visit my facebook and see them there.

Anyways...Im getting frustrated. My computer isn't working very well today. I'm trying to upload pictures to our wedding website for our inspiration boards. Hopefully I'll finish it soon and I can upload it here to the blog. Inspiration boards seem to be a popular technology amongst the wedding world! Its pretty neat, I'll probably have several!

We met with the wedding planner yesterday. Rosa Gibson, from Austin Wedding Planners is amazing. She's super sweet, and so enthusiastic. She's spunky and optimistic. Our consultation went so well. I wish the next 15 months would hurry up so I can just marry Brian and have his babies!!! ♥

I'm watching Biggest Loser Finale Season 9! Its good! GO PINK!!! The top 3 are Ashley, Michael & Daris...the top three that I really wanted to win!

Well I'm headed to do that inspiration board!

TORI

So, I forgot to mention that we are getting a new puppy! Citori will be her name, Tori as her nickname! She was born on March 28! Her eyes just opened recently. A best friend, Lesley is watching her until she is weened. Her friend's dog, Dixie,is Tori's mom and is a black lab! Dixie is an outstanding duck and dove hunter. Brian hopes to have Tori do the same! Of course, I will be training her, just like I did with Peaches, our year-old beagle. Here are a few pics of our new addition to our growing family (lol)!
